Chicken and Spinach (Juz Bake It)


I was getting quiet board of doing all spicy food everyday, n so i decided to go really simple,bland with juz the taste of salt ,pepper and little cheese today.I juz wanted to simply prep and let the oven do most of the work ,Ha ha :)!!! With that short story,here my recipe begins!!

Prep Time:50 min

Ingredients:

  •  Pepper -1/4 tsp
  • Salt to taste 
  • Spinach -1 cup
  • Garlic-2 cloves finely chopped
  • Red chilli or Green chilli -1 no
  • Mayonnise -1/3 cup
  • Shredded cheese or parmesan cheese or paneer-1 cup
  • Chicken breast piece-2(pound them flat using rolling pin or meat hammer)
  • Egg white -1 
  • Panko Bread crumbs or bread crumbs- 1 cup
  • chopsticks- few

Preparation:

  • Heat a skillet, add drop of oil ,sautee spinach ,garlic ,chilli ,salt & pepper until it gets cooked.
  • Now in a mixing bowl add cooked spinach,Mayonnise &cheese and mix well.
  • Use a meat hammer or rolling pin and flat the chicken breast.Now add in scoop of spinach mixture into the chicken and fold the piece and seal it with chopsticks.
  • Now dip this stuffed chicken in egg wash & coat it in panko crumbs or bread crumbs.
  • Smear oil in baking tray lined with foil or parchment sheet & place the chicken ,and let it bake for 30-45 min @ 350 degree F.
  • You can add extra cheese on top at last 5 min of cooking.
  • Note :(Make sure you remove the chopsticks after first 10 min of baking .)
  • Serve it hot with mashed potatoes and boiled veggies.

Parotta Recipe

Parotta Recipe Prep Time:1 hr Ingredients: Maida -3 cups (Plain flour or All purpose flour) Salt-1 tsp Sugar-1 tsp Milk Boiled -1 cup  Preparation: In a Bowl, add maida, Salt & sugar and mix well. Slowly add milk & form a soft dough.  Add a tbsp of oil and mix into the dough. Cover the dough with a lid and allow  it to rest for atleast 2 to 3 hours. Grease your work surface and your hands with oil and pinch dough to make smooth round tennis sized balls. Take each ball and roll it like a thin roti using a rolling pin. Roll it as thin as possible. Rice Pudding

Rice Pudding Prep time - 50 min Ingredients : Rice - 1/4 cup Full fat Milk - 1 litre Saffron or Kesar a few strands Sugar - 1/4 cup Chopped Pistachios and Almonds for garnishing . Preparation: Add rice in a mixer, blend into coarse powder. Bring the milk to a gentle simmer, and add the rice & saffron while whisking continuously. This will help avoid lumps. Bring this to a boil while whisking, and then lower the flame to a simmer. Keep stirring the mixture every couple of mintues. After about 20 min the mixture will start to thicken. Simmer for another 20- 25 min till it thickens considerably and the rice is completely cooked. Add sugar and mix till it dissolves. Switch off the flame and let the mixture cool . Sprinkle with chopped pistachios & almonds. Cool in the refrigerator for atlleast 2-3 hours or overnight. Serve Cold.
