                                                Naan/Indian Flat Bread

Ingredients:

Naan Without Yeast:

  • Maida/All purpose flour- 2 cups
  • Fresh thick curd - 1/2 cup
  • Milk,warm - 1/2 cup
  • Sugar - 1/2 tsp
  • Salt -1 tsp
  • Baking Pwd -3/4 tsp
  • Baking soda -3/4 tsp
  • Melted ghee/Butter -4 tsp
Preparation:
  • Sieve maida with baking powder and cooking soda( to ensure even mixing). Take the sieved flour in a bowl and make a dent in the centre. Pour all wet ingredients, milk, curd, salt, sugar in that dent.
  • Mix well. After a minute, gather the flour with your finger tips, dont knead them hard.Keep them covered for 2-3 hours min. (You can keep upto 7-8 hours). 
  • After resting for 2 hrs, remove the dough and start kneading them. Divide them to even sized balls. The size should be little bigger than chapatti ball.
  • Dust the work surface with maida, Using rolling pin stretch the dough. The shape does not matter, you can form any shape.
  • You can add seasoning of your choice, Garlic chopped , seasame seeds & kasoori methi.
  • Dab water on top of the naan & slide that side into hot tawa or Skillet. (Note :The side you dab water should hit the skillet ).
  • Cook in medium flame & within a minute, You can see it puff up. Now turn the pan upside down, so the naan gets exposed to direct flame, this way it will look more like restaurant style naan (0r) You can simply place the naan on wire mesh in direct flame as you make rotis (or) Simply turn over in tawa itself and cook both sides till golden brown.
  • Add Butter on both sides and serve hot.
  • Serve it hot with favourite side dish of your choice. It taste great with Chicken Butter Masala, Chicken Tikka Masala.

      Parotta Recipe Prep Time:1 hr Ingredients: Maida -3 cups (Plain flour or All purpose flour) Salt-1 tsp Sugar-1 tsp Milk Boiled -1 cup  Preparation: In a Bowl, add maida, Salt & sugar and mix well. Slowly add milk & form a soft dough.  Add a tbsp of oil and mix into the dough. Cover the dough with a lid and allow  it to rest for atleast 2 to 3 hours. Grease your work surface and your hands with oil and pinch dough to make smooth round tennis sized balls. Take each ball and roll it like a thin roti using a rolling pin. Roll it as thin as possible.       Rice Pudding

      Rice Pudding Prep time - 50 min Ingredients : Rice - 1/4 cup Full fat Milk - 1 litre Saffron or Kesar a few strands Sugar - 1/4 cup Chopped Pistachios and Almonds for garnishing . Preparation: Add rice in a mixer, blend into coarse powder. Bring the milk to a gentle simmer, and add the rice & saffron while whisking continuously. This will help avoid lumps. Bring this to a boil while whisking, and then lower the flame to a simmer. Keep stirring the mixture every couple of mintues. After about 20 min the mixture will start to thicken. Simmer for another 20- 25 min till it thickens considerably and the rice is completely cooked. Add sugar and mix till it dissolves. Switch off the flame and let the mixture cool . Sprinkle with chopped pistachios & almonds. Cool in the refrigerator for atlleast 2-3 hours or overnight. Serve Cold.
