Chicken kofta curry

Ingredients:

Chicken kofta:

  • 225 gms(1 cup) Minced chicken
  • 1 cup chopped onion
  • 1/4 tsp Ginger Paste
  • 1/4 tsp Garlic Paste
  • 1/2 tsp Roasted cumin seeds
  • 1/2 tsp Snauf seeds
  • 1/2 tsp Corriander powder
  • 1/4 tsp Red chille powder
  • 1 tsp Chopped corriander leaves
  • Salt to taste 

For Gravy:

  • 1 Medium Onion Ground to paste 
  • 1 Medium Tomato Ground to paste
  • 1/2 tsp Ginger Paste
  •  1/2 tsp Garlic Paste
  • Whole Garam Masala(Black Cardamom,Bay leaf)
  • 1/2 teaspoon Cumin seeds
  • 1/2 teaspoon Red Chilli powder
  • 1/2 teaspoon Corriander powder
  • 1 teaspoon Garam Masala Powder
  • 1/8 teaspoon Keema masala(optional)
  • 1/2 cup Cream (Thick yogurt)
  • Salt to taste
  • 1 Tablespoon oil or Ghee
  • Chopped Coriander leaves  for garnish.
Preparation:
  • In a mixing bowl, add Minced chicken & abv kofta ingredients, mix well and form a medium size ball.
  • Heat a pan add oil and shallow fry the kofta balls or you can even steam them using a steamer. Transfer them once it turns golden brown.
  • In a kadai heat oil or ghee and add bay leaf, cumin and black cardamom. 
  • Once it starts to splutter add onion paste and cook for 2-3 minutes. 
  • Now add in Ginger garlic paste & cook till the raw smell disappears.
  • Mix in tomato puree, salt &Spices(red chili/Corriander/Garam Masala powder)let them coat well with the onion & tomato.
  • Add Cream mix well & 1 cup water & let it boil in medium flame for 5 minutes. 
  • Once the oil starts to separate from the masala,
  • Drop in cooked keema koftas, let it simmer for final 5 min.

  • Now the Chicken kofta curry is ready to serve.
  • Serve it hot with steamed Rice.

Parotta Recipe Prep Time:1 hr Ingredients: Maida -3 cups (Plain flour or All purpose flour) Salt-1 tsp Sugar-1 tsp Milk Boiled -1 cup  Preparation: In a Bowl, add maida, Salt & sugar and mix well. Slowly add milk & form a soft dough.  Add a tbsp of oil and mix into the dough. Cover the dough with a lid and allow  it to rest for atleast 2 to 3 hours. Rice Pudding

Rice Pudding Prep time - 50 min Ingredients : Rice - 1/4 cup Full fat Milk - 1 litre Saffron or Kesar a few strands Sugar - 1/4 cup Chopped Pistachios and Almonds for garnishing . Preparation: Add rice in a mixer, blend into coarse powder. Bring the milk to a gentle simmer, and add the rice & saffron while whisking continuously. This will help avoid lumps. Bring this to a boil while whisking, and then lower the flame to a simmer. Keep stirring the mixture every couple of mintues. After about 20 min the mixture will start to thicken. Simmer for another 20- 25 min till it thickens considerably and the rice is completely cooked. Add sugar and mix till it dissolves. Switch off the flame and let the mixture cool . Sprinkle with chopped pistachios & almonds. Cool in the refrigerator for atlleast 2-3 hours or overnight. Serve Cold.
